The first few chapters on Purchasing fundamentals (Purchasing Systems, Distributors, Legal Issues, etc) are mind numbingly boring to read, the author tries to cover a lot of important concepts and issues, which is great, but it is almost as bad as trying to read the actual text of the Poultry Products Inspection Act.For a textbook that is supposed to be for the "Food Service Operation", the chapters on food is actually very brief. Seller = bought a used product identified as used-very good. the book i received was as advertised in very good condition and i received the book in a very timely manner.2. Content of the Book = i purchased this book since i am new to the foodservice industry and it was recommended to me by my boss so i could get up to speed on the industry. i've picked this book up multiple times and it's dry, dry, dry material. i had no delusions that a textbook on the foodserv. moolord said Its a book!.
